What to Watch on Bravo Super Bowl Sunday & What To Cook (Recipes)
Super Bowl 50 is here!
No all-new Real Housewives of Atlanta or Real Housewives of Potomac tonight, it’s all about Super Bowl! And when a bag of chips just won’t cut it, these recipes (all made with beer!) come together flawlessly and will get you from kickoff to halftime show to two-minute warning with a full belly.
Chile Con Queso with Charred Chiles
Makes: 3 cups
Ingredients:
- 1 tablespoon butter or canola oil
- 1⁄2 cup chopped onion
- 4 cloves garlic, minced
- 2⁄3 cup chopped roasted chiles
- 1⁄2 cup Mexican-style lager
- 2 tablespoons all-purpose flour
- 1 cup low-fat milk
- 11⁄2 cups shredded cheese
- 2 plum tomatoes, seeded and diced
- 1⁄4 cup chopped fresh cilantro
- salt to taste
Instructions:
• Melt the butter (or heat oil) in a large saucepan on medium heat. Add the onion and cook, stirring occasionally, until tender, 3 to 5 minutes. Add the garlic and chilies and cook, stirring, for 1 minute. Add the beer. Increase heat to high, scraping up any browned bits from the bottom of the pan, and cook until the liquid has mostly evaporated, 3 to 5 minutes. Sprinkle the flour over the vegetables and cook, stirring, for 30 seconds.
• Reduce the heat to medium and whisk in the
milk. Bring to a simmer, whisking constantly, until sauce is thickened, 2 to 3 minutes.
• Reduce the heat to low and gradually add the cheese, stirring constantly, until completely
melted. Stir in the tomatoes, cilantro and salt to
taste, and serve.
Brown Ale Beef Chili
Makes: makes 8 1-cup servings
Ingredients:
- 2 pounds ground beef
- 1 large onion, diced
- 1 large red bell pepper, diced
- 4 cloves garlic, chopped
- 3 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 12 ounces brown ale
- 2 15-ounce cans diced fire-roasted tomatoes
- 1 cup dried black beans
- 1 teaspoon salt
Instructions:
1. Brown the beef, onion and pepper in a large skillet over medium-high heat until the meat is no longer pink, about 15 minutes. Add the garlic and spices and cook, stirring, 30 seconds. Scrape into a slow cooker. 2. Add the beer, tomatoes and beans. Cover and cook on low 8 hours or high 4 hours. Stir in salt.
